Kale Waldorf Salad
Ingredients
- 4 c. Raw kale, chopped
- 1 ea. Fuji apple, diced
- 1 ea. Granny Smith apple, diced
- 1 c. Walnuts, chopped
- 1/2 c. Celery, sliced
- 1/4 c. Dried cranberries
- 2 T. Balsamic vinegar, light
- 2 T. Dijon mustard
- 1 T. Red wine vinegar
- 1 T. Honey
- To taste Salt and pepper
Instructions
- On a cutting board, chop kale, apples and walnuts. Then slice celery.
- In a small bowl, add Dijon mustard, balsamic vinegar, red wine vinegar and honey and stir until well combined to make vinaigrette.
- In a medium bowl, add all vegetables and fruit and toss. Drizzle vinaigrette and toss until well combined.
- Salt and pepper to taste.
