Kale Waldorf Salad

Ingredients
  

  • 4 c. Raw kale, chopped
  • 1 ea. Fuji apple, diced
  • 1 ea. Granny Smith apple, diced
  • 1 c. Walnuts, chopped
  • 1/2 c. Celery, sliced
  • 1/4 c. Dried cranberries
  • 2 T. Balsamic vinegar, light
  • 2 T. Dijon mustard
  • 1 T. Red wine vinegar
  • 1 T. Honey
  • To taste Salt and pepper

Instructions
 

  • On a cutting board, chop kale, apples and walnuts. Then slice celery.
  • In a small bowl, add Dijon mustard, balsamic vinegar, red wine vinegar and honey and stir until well combined to make vinaigrette.
  • In a medium bowl, add all vegetables and fruit and toss. Drizzle vinaigrette and toss until well combined.
  • Salt and pepper to taste.
