Quinoa Bites

Course Breakfast
Servings 24 Bites


  • 2 eggs lightly beaten
  • 1 cup quinoa cooked
  • 1 cup cooked oats
  • 1/2 cup apples chopped
  • 1/2 cup pears chopped
  • 3 tbsp brown sugar
  • 1 tbsp granulated sugar
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • salt to taste
  • cooking spray to taste


  • Preheat oven to 350°F degrees.
  • In a small mixing bowl, combine cinnamon, nutmeg and sugars.
  • In a large mixing bowl, add cooked quinoa, oats and spice mixture. Then add the maple syrup, apples, pears and eggs and mix until just combined. Salt to taste.
  • Spray mini muffin tin (24 count) with non-stick cooking spray. Be sure to spray the top of the pan as well because the quinoa bites will overflow out of the cup slightly.
  • Fill each muffin holder with 1 tablespoon of the mixture and bake for approximately 15-20 minutes.
