Quinoa Bites
Ingredients
- 2 eggs lightly beaten
- 1 cup quinoa cooked
- 1 cup cooked oats
- 1/2 cup apples chopped
- 1/2 cup pears chopped
- 3 tbsp brown sugar
- 1 tbsp granulated sugar
- 1 tbsp maple syrup
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- salt to taste
- cooking spray to taste
Instructions
- Preheat oven to 350°F degrees.
- In a small mixing bowl, combine cinnamon, nutmeg and sugars.
- In a large mixing bowl, add cooked quinoa, oats and spice mixture. Then add the maple syrup, apples, pears and eggs and mix until just combined. Salt to taste.
- Spray mini muffin tin (24 count) with non-stick cooking spray. Be sure to spray the top of the pan as well because the quinoa bites will overflow out of the cup slightly.
- Fill each muffin holder with 1 tablespoon of the mixture and bake for approximately 15-20 minutes.
