Ingredients
| • 6 cups fresh arugula | 
| • ½ cup goat cheese, crumbles | 
| • 1 avocado, pitted and diced | 
| • 2 cups red or green seedless grapes, halved | 
| • ½ cup walnuts and/or pecans, chopped | 
| • OPTIONAL – ⅓ cup extra virgin olive oil | 
| • OPTIONAL – ¼ tsp sea salt | 
| • OPTIONAL – 3 tbsp white balsamic vinegar | 
| • OPTIONAL – 2 tbsp honey | 
| • OPTIONAL – ⅛ tsp ground pepper | 
Instructions
1. Combine arugula, grapes, avocado, nuts and red onion in a bowl and toss.
2. Sprinkle salad with crumbled goat cheese and serve immediately.*
Variations
1. Whisk olive oil, balsamic vinegar, honey, sea salt and pepper together until well combined.
2. *Drizzle on top of salad and serve.
