Ingredients
  

  • cooking spray
  • 1 14 oz. can pinto beans, drained and rinsed
  • 1 14 oz. can fire roasted tomatoes, diced
  • 4 tbsp tomato paste
  • 2 cups sweet potatoes, cubed
  • 1 cup dry quinoa
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 1/2 tbsp chili powder
  • 1 1/2 tsp cumin
  • 1 tsp dried oregano
  • 4 cups low-sodium vegetable broth

Instructions
 

  • Spray slow cooker with cooking spray.
  • Place all ingredients into slow cooker and stir.
  • Cook on high heat for 4 hours.
