Preheat oven to 350°F degrees.
In a small mixing bowl, combine cinnamon, nutmeg and sugars.
In a large mixing bowl, add cooked quinoa, oats and spice mixture. Then add the maple syrup, apples, pears and eggs and mix until just combined. Salt to taste.
Spray mini muffin tin (24 count) with non-stick cooking spray. Be sure to spray the top of the pan as well because the quinoa bites will overflow out of the cup slightly.
Fill each muffin holder with 1 tablespoon of the mixture and bake for approximately 15-20 minutes.
